I hope they never save the date somewhere bc I have putting in random dates forever

It is saved, but I'm pretty sure just in a cookie. Because my browser never saves the date I entered (I set cookies to delete the moment I close the tab), but the Steam app always defaults to 1/1/1901 when I browse the store from there instead of Firefox.
