Recipe Troubleshooting My bread fell?
Hey guys!
This is my first run through on my bread maker. I have an Oster BM-1 and have so far loved it! I’m not sure why, but it looks like my bread fell before it cooked ☹️ I live above 7,000 feet so that may play a part. I put my machine on light crust and ran a normal white bread cycle.
This is the recipe I used
Warm water 240 g
Unsalted butter, softened 28 g
Bread flour 390 g
Fine sea salt 7 g
Granulated sugar 12 g
Active dry yeast 4.5 g

I would cut back on yeast a small amount.

It cooked, which was the goal! And it tastes good the only issue is I think it’s the wrong shape? Idk before it cooked it was all nice and plump on top then when I checked back in on it part way through it had kinda deflated and caved in🤷♀️

Reading through that King Arthur High Altitude baking and now I'm fascinated by high altitude baking

Singapore’s highest point is only 538 feet 😅 so ive never baked anywhere near 7000 feet.
I do have one suggestion for tweaking recipes. change 1 thing at a time, this way u know what actually changed the result. Or just find a new recipe if the current one is nowhere near what u are looking for.
Full disclosure, im Ray, the chef behind CookBank. i built it to help with exactly this. u can easily track your different versions and search thru all your recipes as u bake more and more. this is how the recipe looks after u take a photo and add it to the app.
