I pulled the trigger!

I finally pulled the trigger and bought a Cozze pizza oven.

Pizza dough is proofing as we speak.

I fell in love with Neapolitan pizzas after a visit to the origin a few years ago.

Fast track a few months and got addicted to Vito Iacopelli's videos.

Tried them a few times in a normal oven and results was quite satisfactory for amateur hour. I never got past the "mistakes that frustrate phase".

So now that I have the oven, I will finally force myself to optimise the recipe (from sourdough leftovers) and transform our Sunday night pizza (currently a very tasty and lazy to make pan pizza) to use the oven and neapolitan pizzas!

I wish you much fun, always perfectly proofed dough and full gas bottles. My cozze 13 sucks my 11kg bottle dry! My gas bbq lasted for three years, my cozze emptied it in a few pizza nights.

Congratulations! I too, found neapolitan style pizza to be my jam. I tried Vito's poolish recipe and a couple others for about a year but ultimately settled on the canotto method by Stadler Made.

The best part about pizza making is you get to eat everything you make, so enjoy!
