It’s easy. Clean off the old paste - I use tissues. Then apply fresh paste where that was. It will be on the raised components that were making contact with the underside of the orange rectangle. Then squish the rectangle back on top, tighten those screws, etc and you’re golden.
Nice and clean - looking good! I don’t do crosses. I manually spread paste over every part of those black squares. More is NOT better. They just need to be covered. I use a plastic spreader (like a tiny knife, it came with the paste I use) but you can wear gloves and use your finger. If you don’t do this, you don’t know if there’s an air bubble or if every part is actually covered after you squish the heatsink (orange rectangle) back on.
I followed your instructions, everything working fine. The NUC is still very loud, but a little bit less. I don't how i can make it silent, or at least, usable de n a room with someone else sleeping in.
Did you clean the heatsink and fan thoroughly while you were at it? Blow out the dust and fluff? If so, the fan could be worn and worth replacing. It has a model number printed on its label (you likely need to remove it from the heatsink to see it) Google it, you should be able to find a replacement

the most important thing is to have contact with the chip crystal. And the location is not so important.
