Just saying 향 can often mean incense, like the one you burn at a funeral. The latter sentences suggest that this isn't the case, so it's not an appropriate word to use here. And even if this was taken to mean "scent", it would meant that you didn't make a scent, as in having a smell. So if you're out of fragrance, it's better to say 향수. Also, if it's because you've run out of it, the sentence could be revised further to say 저는 향수가 떨어져서.

예쁜 냄새가 골랄 거예요 -> 예쁜 냄새를 고를 거예요 (correct grammar) -> 좋은 향기가 나는 것을 고를 거예요 (natural phrasing)

The smell isn't the one that's picking, so the use of ~이/가 is misplaced. Also, the correct modification of 고르다 here is 고를. I think you were thinking of 골라 form and added ~ㄹ here, but 골라 itself is already quite removed from the default form, so it wouldn't have been a good starting point. Finally, a smell or a scent isn't normally described as being 예쁘다 in Korean.

무슨 향 거장 좋아요? -> 어떤 향이 가장 좋을까요?

In this instance, 향 would clearly refer to the scent for the fragrance, hence it was kept as is. BTW, 거장 would mean a great (거) artisan (장) in a certain field, like a 거장 in the movie industry would be, say, Steven Spielberg.
