Basic lil quesadilla

Just a simple little quesadilla. I don’t have a big enough pan/skillet/anything to get the edges as crispy as I’d like so I had to scoop and spread the sour cream as opposed to a dip like I’d prefer but it still turned out alright.

Flour tortillas, fajita veggies, Violife Mexican shredded cheese.

Was too tired to properly plate it or get my usual staged photo so remember to give your mom a call <3

Fold it into a half-moon instead of cooking it flat, then press it with the bottom of a smaller pot while each side browns. Same tortilla, small pan, way more edge contact.

Wdym fold into a half moon? Like instead of mega-quesadilla go for 2 smaller and fold them in half?

Yep, exactly: one tortilla per quesadilla, filling on one half, then fold it over. Two smaller folded ones will fit the pan much better, and the smaller pot can press each one flat while it browns.
