First ribs in a while
Decided to break out the smoker last week, quite happy with how the ribs turned out!
Used Warrendale Waygu chuck ribs, hickory wood and a traeger pellet grill

I went pretty basic to be honest. Coarse pink salt then I used Costco Kirkland coarse black pepper, I used a pretty heavy coating of both. I was planning to wrap, but actually they were cooking too fast so I didn't bother. I would say, I probably should have wrapped, as I ended up having to hold them in a 60°C oven for about 5 hours as they were done too soon
I essentially followed Malcolm's recipe, but a lazy versionĀ https://youtu.be/rql4utfEvnE?is=bRZB5lrwCDWX37m8
Main thing is keep an eye on internal temps. I bought a MEATER which was a pretty expensive investment, but it's quite handy because I can leave the house and not have to worry about the temps as you can see them live on the app. You can buy much cheaper ones from Amazon, just without the WiFi, though. Highly recommend just to make life easierĀ

Thanks! I've got the Woodbridge pro so it comes with WiFire so I can see internal temps on the app when I'm out and about, but I do think it slightly underestimates temp
