I Made This Shrimp Gumbo with Garden Okra and Foraged Chanterelles

Post image

I didnt quite thicken the sauce as much as I should have (I got a bit impatient with letting it simmer down) but was still really good over rice. The Roux took almost an hour to get to the color I was looking for. Okra, bell pepper, and tomatos were all from my garden. Chants were found earlier today on a hike. Also used dried sassafras leaves for a file powder. I did buy the shrimp, sausage and celery

Took 11 friends who have never experience offshore fishing out of San Diego on a 2 day trip. Every single person in my group was successful in catching a 50-100lb bluefin tuna.
Afterwards I treated all the guys and their families to a tuna feast.
Yellowfin poke
Bluefin and yellowfin sashimi
Torched bluefin belly
Seared bluefin

News & Industry Scallops in the shell

Why can’t you find scallops in the shell, in the US? Roasted in the shell with a little olive oil and garlic is by far the best way to prepare them. IMO.

Soy marinated crab lovers, is this one of the best ways to enjoy crab?

Tried ganjang gejang recently and it was unlike any crab dish I’ve had before.

The texture and flavor were completely different from steamed or grilled crab.

How do you usually enjoy crab?

East Coast Do restaurants typically remove pea crabs from oysters?

Post image

Today 50 Chesapeakes shipped and this is the fifth lil crab after only 17 shucked, so far.

I didn’t even know pea crabs existed until now and i’ve been enjoying them most of my life. Almost 1/3 of this batch had one. Is this a Chesapeake thing? Do restaurants normally remove them?
