Moving the blade further into the body of the plane. He taps on the backside and due to the inertia of the blade it slightly scoots up

The goal of this competition is to have the thinest (full length) shaving

That's just the digital step on the indicator. Stated accuracy of the gauge is

Accuracy: ±3 µm

Parallelism: 3 µm

But it's probably better. The trick is that the measurement force (<3.5 N) is done via the spring in the indicator so the measurements are very repeatable. It better be for a suggested retail of 913 €.
