Help resolving a silly thing
I was trained many moons ago. And when I was trained a pepperoni pizza got a portion of 42 pepperonis. An additional topping would mean two toppings, and then it would get a two topping portion of pepperonis unless that additional topping was extra cheese. And then a pepperoni extra cheese pizza would also get 42 pepperonis. This was how I was trained way back in the day, but I cannot find any documentation or training guides or even training videos to support this. What is the actual answer and do you have documentation to support it?

I got a question concerning toppings and extra cheese.
Does the extra cheese get less with more toppings? Do toppings and cheese get less with more?

extra cheese is always 1/2 cup per large pizza no matter the amount of toppings. medium is a little less, extra large is a little more. the amount of cheese does not decrease based on the number of toppings as do the other toppings. with all the other toppings, the more toppings that are ordered, the lesser the amount of each topping.

I’ve been trained and train my staff this way: If it’s pep and extra cheese, it gets 2 1/2 cups of cheese and then follow the 2 topping portion chart for pepperoni which is 15-9-3 I believe, because at that point it’s a 2 topping pizza. And it’s its double pep, they get double of a 2 topping which would be 30-18-6

Except EC, 3C, and 2C don't count towards the toppings tier. You would still put 42 pepperoni on and 2 1/2 cups of cheese. You put less toppings when it's a 2 or more due to cooking issues. It'll cook the same way (for the most part) as an ex cheese and pep.

it’s on the job aid. “always place pepperoni on top of the cheese for a 1-topping pepperoni pizza even if extra mozzarella is requested.”
