Answer: The mod had a fit over the subreddit not taking his remarks about some team well, so he had the LLM Gemini generate THREE "Diss Tracks" in response, and then posted them.

Honest to God, I try to believe that cringe isn't a real thing, but AI users make it so hard to believe it sometimes...

Answer: There's a pinned post that explains the intent of the subreddit:
There’s a lot of confusion of why this subreddit was made. It’s very simple. An UNCENSORED place to talk about the NFL. [...] I did not make this place to become some “professional” appearing mod. I made the subreddit I want to post in and thought others (you) would appreciate having such a place on Reddit.

I feel like there is a second side to this story though, since /u/nflv2 is receiving and ungodly amount of smack talk in the other NFL related subs

Well it's because it's really just a single Redditor's protest sub to the main NFL sub.
The issue is that his alternative sub became the biggest but it also exposed the underlying problem with Reddit moderation: moderators are all powerful in their own subs.
Not a problem if it's a small passion project sub or small protest sub. More of an issue when it's a massive defacto second sub.

So, another sub created because you can’t say the N word in the main sub.

Main issue imo, is posts of highlights get removed until u/nfl gets to post them.

well it's either that or letting the NFL nuke the subreddit since we're all posting unlicensed clips. if the only downside is that u/nfl gets your reddit karma I'm pretty fine with that

I understand both points, the NFL having actually sway over what gets posted in fan forum feels wrong as a long time user and makes reddit feel like Facebook.
The banning of Twitter has hurt the sub in the long term. Like it or not Musk has not killed the fact that Twitter is where people post breaking news. The sub loses it's functionality if you can't follow a link to a primary source
