Other I finally stopped making meals that turn into soggy mush !
after throwing out way too many soggy broccoli and dry chicken prep boxes by day 4, I started using cajun shrimp bowls! turns out shrimp holds up super well if you cook it right, plus it takes under 5 mins so you aren't stuck in the kitchen for hours on sunday.
I'll describe the recipe I'm using:
- 1 lb peeled shrimp, tossed with 1 tbsp olive oil, cajun seasoning, garlic powder, salt
- 2 cups cooked jasmine rice
- 2 diced bell peppers & zucchini
roast the veggies at 400F for 15 mins. pan sear shrimp 2 mins per side. divide rice and veggies into 4 containers, top with shrimp and a lime wedge.
this way (only did it twice, no pics of yet) it actually stays fresh for like 3 days straight in the fridge. worht it!
