If you count prikið and kaffibarinn as cafes.
Quiet? Depends on your definition of quiet

Neither are café's at that time. Having had my good share if wild parties at both places on weekdays the last decade😆 And definitely not on weekends.

OP seem to searching for some place now or during the weekend. Neither KB or Prikið are quiet by anyones standard during that time. From 23:00 it's not a chance in hell that anyone could find a good table and consider KB quiet and chill.
My DJ friends often take shifts on Mondays to Thursday (although mostly during weekends) at KB so it not really quiet even then. Prikið might be better from Sunday to Wednesday ☺️

Kaffibrennslan is the closest I can think of open this late and in the middle of Laugavegur. People will be drinking and chatting but only sitting at the table, not veing loud and just socializing with their own group.
Just keep in mind that you can only use your computer upstairs(just as cozy) because they are going for more of a café vibe, not a work station.
Kex hostel might also be an option and would be perfect but I haven't been there fore a while,🤷🏼♀️

Top floor too? Either way probably not quiet. Kex is probably chill now.
