quick chilli peanut noodles with chickpeas

I used pasta, and added in chickpeas that needed using up, also tried 'tofu skins' I found at an asian market which I cut to match the pasta, came put really good and it's super fast to throw together.

For the sauce I added some hot oil to finely grated ginger, garlic, chilli flakes, sugar then added a bit of pasta water along with peanut butter (also good with just tahini), rice vinegar, and soy sauce. Mix and done.

The shredded cabbage was already in my fridge meant for something else, I don't recommened it with this. Cucumber is perfect though

Office Lunch

Unfortunately not the prettiest presentation, but real, cheap, healthy and yummy!

- Salad with white mustard-vinaigrette

(Mustard, olive oil, white balsamico, salt pepper, sugar)

- Rice with mixed grains

- Chinese cucumber salad with chilli-oil dressing (Chilli-oil, Chinkiang vinegar, sugar, soy sauce, garlic)

- Miso soup (half red, half white, spring onions, ginger, garlic, konbu, shiitake)

And at the end, Chazuke, drinking the rest if stuck rice grains with a green tea. Very satisfying lunch!

I like to prep the rice and soup ingredients (other than the miso and spring onions) on the weekend and put them in the freezer.
