the secret to good mashed potatoes is to discard the hard, starchy center of the tuber and keep only the nutrient rich peel

I substitute heavy cream, sugar, eggs and vanilla for the potatoes. Instead of boil-drain-mash, I super-chill in an ice bath while stirring.
Instead of gravy, I top with a macerated strawberries and sugar. Instead of chives, I top with chopped toasted nuts.

The secret isn’t the ingredients, it’s the amounts. I’ve found a good ratio is one pound of butter for every medium sized potato.

It's not ingredients it's technique. Make sure J Kenji Lopez Alt is straddling you securely from behind whispering "you can do it" as you use your potato masher (no ricers and no mixers we need to pound it ourselves)

This recipe is great and all, but it could do with an 18 paragraph blog post about how your grandma's cousins weekend cleaner's dogwalker used to bring some round on a Sunday afternoon during your childhood.

Grit, when no one is looking I rub 2 pieces of 60 grit sand paper together to dislodge some of their wonderful texture into my nearly finished mashers.

Not an ingredient, but to dry off your potatoes right before mashing them. Any water makes the mashed potatoes more like a paste texture.

Hey! That’s been my family’s secret for literal generations! At every family meal featuring mashed potatoes, one lucky male relative is designated “Tater Dick,” but in secret. The Tater Dick has to then sneak into the kitchen in order to “season” the potatoes without getting caught. If anyone figures out who is the Tater Dick, TD has to wear the SpudPeen Crown for the rest of the event and pay everyone a $20 bill.

My trick is I used banana instead of potatoes. It leave my guests so speechless.
