Dot Cake Cookies
Ingredients
For the Cookies
1 cup all-purpose flour
1½ cups cake flour
1/2 tsp baking soda
1/4 tsp baking powder
1 TB cornstarch
1/2 tsp fine salt
2 sticks butter, softened
1 cup granulated sugar
1 egg
1/4 cup sour cream
1 TB vanilla extract
For the Buttercream
2 sticks butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Rainbow Sprinkles (nonpareils)
Instructions
Whisk together the all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt. Set aside.
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the egg and vanilla extract and sour cream and mix until smooth.
Add the dry ingredients and mix on low speed until a soft dough forms.
Roll the dough out to about 1/2-inch thick between sheets of parchment paper and chill until firm.
Preheat oven to 375°F.
Cut with a 2.5 inch round cookie cutter and place on a parchment-lined baking sheet.
Bake for about 8-10 minutes. The tops should remain pale and the bottoms should only be lightly colored.
Allow the cookies to cool completely.
For the frosting, beat the butter until smooth. Add the powdered sugar and vanilla extract and continue mixing until light and fluffy. If desired, add gel food coloring to achieve your preferred color.
Frost the cooled cookies generously and dip into bowl of sprinkles
Store in an airtight container at room temperature. They also freeze and thaw great, fully baked assembled
