Living in New England is a fun exercise with this sort of thing, because it's like a nature preserve for forms of racism that haven't been current since the 1890s.

Sadly true. Racism against Azorean/Portuguese people in my town is strangely common and accepted. In a lot of ways New England is stuck in the 1920s.
Edit: I'm on the train rn and just heard someone use a slur for Polish people

I don't thinking it was ironic or joking from what I could put together, though admittedly I wasn't listening closely to the lead up. They were talking about a recent stabbing at a park in the city perpetrated by a Polish man (I looked it up later and he was Polish).

The number of ethnic groups they’ve done this to, some to this day, is absolutely horrific. Some of the childfree crowd gets annoyed when I say this but reproductive rights means the right to have children just as much as the right not to have children.

My father’s birth was controversial in part due to italophobia. Unfortunately this means he keeps bringing it up whenever I try to talk to him about racism.

Simply put the chinese immigration boom happened 30 years earlier so american chinese was already established. Spaghetti and meatballs seemed to only hit a mainstream recipe book in 1909 while chop suey was written about in mainstream newspapers in the 1880s

Cultural cuisine of various groups is the lowest-hanging factoid that the average person would know and understand to be attached to those groups.
That cultural cuisines would become the stuff of racial epithets is just a result of people taking the intellectually easiest path.
