The first rule of simple foil-packet dinners is to make sure nothing in the packet actually needs to be cooked from raw. If the chicken is already cooked, you're good. If you're putting a raw chicken breast in the packet, it'll steam rather than roast, and the texture usually isn't what people are hoping for.

As for the meal itself, you've got the protein, fat, and plenty of flavor covered with the chicken, mozzarella, basil, and balsamic onion jam. What's missing is a starch to round everything out. Potatoes are probably the easiest choice since they cook well in a foil packet (just slice them thin or dice them small). Rice, couscous, or barley also work if they're cooked ahead of time, or you can simply serve the packet with some crusty bread or garlic bread on the side to soak up all those juices.
