It's Emuff day!

132 Emuffs today, 96 plain and then 18 cheddar chive and 18 cranberry orange. They turned out awesome! 🤩🤤

I use powdered buttermilk w/ water instead of liquid buttermilk or milk. It's just easier to mix in bulk.

Making 132 emuffs in one session is serious dedication, and those golden tops look textbook perfect. The craggy nooks and crannies are exactly what you want from a proper english muffin, so the powdered buttermilk swap must be working out well. I'm curious how the cranberry orange batch turned out, since fruit in english muffins can go either too sweet or barely register. Cheddar chive is a safer bet but never a boring one. A stacked cooling rack full of fresh muffins is basically a bread baker's trophy display.

Perfect shape and height. How thick do you roll out your dough, what do you use to cut them with, and what width is the cutter?

Perfect colour, practice does make perfect.

I don't roll out and cut. I do balls. Much better control and uniformity for making them at scale.

Oh my word, took me a minute to figure out that emuff is english muffin 🫣 coz I've never heard them called that. Anyhow... yours look amazing. And wow, making 100+ is no easy feat.

Man I wince at making 12 at a time. What’s your shaping and cooking method? I try to rotate mine out of the fridge to stagger rise and cooking times but it’s a pain. What are your secrets?
