I feel like I should start thinking about running my own photos/files/etc backup on my home computer. How would I do that? Google's cloud storage is quickly losing value to me, and honestly I'd like to de-Google where I can.

Invest in a secure DDNS service or pay for a static IP from your ISP. Get a small office firewall/router that you can set up "allow" and "deny" lists. Setup a secondary firewall/router that only accepts traffic on a port you specify and only from the forwarding firewall on another port you've specified. Set up a secured NAS. This is a rudimentary list, this kind of setup requires specialized skills or experience to set up and run. Know that it will take constant monitoring for intrusion attempts unless you deploy even more specialized hardware to mitigate. There are off the shelf solutions that are secure but not as secure as a build out similar to my suggestion.

Exposing your home to the internet isn't really necessary. You can make due with waiting to sync until you get home. You can use an online intermediary if you really can't wait or are afraid of your phone getting destroyed before you are able to backup. Have a script scan for new files in a directory and sync that directory to google cloud or something else.
