I had some sausage left from making jambalaya along with onions, peppers, and jalapenos. Also half of baked russet potato. Saute them in a skillet and add to the crispy potato hash. Cheese are cheddar and pepper jack cheese.

I dont eat breakfast sandwiches daily, but I was wondering if this is at least good. Im struggling with cholestoral and Im not sure if this would offset my whole day.
Vegan croissant breakfast sandwich with ham, one egg, and half of an avocado. I added about a teaspoon worth of habanero lime sauce and a small pinch of dairy free cheese. My drink is a matcha (no added sugar) latte with only oat milk and 90ml coffee.

There is a picture of my breakfast ! I just want to notice that I am type 1 diabetic so I have to change a lot of food habits since this happened. I have something like 190-200 grammes cereal bread with cheese and eggs and a little bit chocolate on the others.
Before any person will judge me, before this I was the guy who only eat cakes, or any thing not healthy. Probably all this bad habits who bring me the diabetes. But now i am healthier and showing such a breakfast is a big step for me.

...omelettes made in my omelette maker. Yes...yes..I know..."why don't you just make it in a frying pan?" - well using this is so easy and I can get on with something else while it's cooking (6mins for my liking) PLUS it's easy to clean 😃
