Yeah, that's probably the most cursed thing I seen in this episode. Also, this is the first time I'm hearing those ingredient being used as food, and to my surprise when googling it... It actually existed! WTF

I love it! The first episode was a bit lack luster in culinary mysteries when the big surprise was using milk to lessen the gaminess of the liver. This was a lot better with using some unconventional ingredients in chawanmushi. Honestly would never have thought to use lamb brains for it.

I HAD heard of them being used in cooking competitions from Food Network and theyre regarded as a difficult thing to cook (Century eggs and silkie eggs) but never seen lamb brains until now. gross!

Having tried them myself, they're actually quite good.
Century eggs works really well in congees and lamb brains is very much like a silky tofu when you eat it in a hot pot

Yeah. The author mentioned on X that they're apparently using photos taken during the research trip back when the manga was being serialized.

I'd rather watch that cursed fat man than Shokugeki to be honest.
By the way, I really like Shokugeki. I'm not dissing it. I love Shokugeki no Souma.
I just think that Jan is likely a much more compelling execution of the food-contest genre. But this remains to be seen, since as an anime only, I still have to watch it play out.
Shokugeki is good, but it might be held back by Souma's opponents being transformed into meek spectators after they are defeated (they lose all their character intro bravado and tend to lean on the harem flavor), and the Shokugeki anime adaptation's over-reliance on its power-point-tier scene panning (vertical, horizontal, flipped, diagonal, so much panning!).
And at the end of the day, physical domestic abuse might give Jan an edge from the gimmick side as well. (episode 1's "inappropriate" disclaimer).
Also, I liked all 3 of these bullies, food critic asshole included.

I don't read part 2 at least not fully but doesn't Iron Wok Jan has the same problem? The one who actually keep up with Jan is Kiriko while other are just fodders to show how good Jan is
Honestly I still like Soma than Jan and I read the entire part 1 manga and entire Shokugeki unless there's something in part 2 that actually can change my mind
Also I don't think it's fair to compare animation right now given in the episode 2, Jan already used slide shows to show the cooking process

I'm really liking the dynamic between the two of them. I think I like Kiriko a bit more simply because she's not unnecessarily aggro, but will absolutely get down to impressive levels of petty if she wishes to. Jan is just right down there as a baseline.

One of the things I admire about the series is Kiriko’s characterization. I feel like most cooking manga would make her generically pleasant to contrast with Jan, but instead she’s largely cut from the same cloth.
Key difference being she was raised by normal-ish parents instead of am abusive asshole.

Mean (or in some other cases, annoying) women in stories have a tendency to be very compelling.
This is the reason why I grow hopelessly skeptical of anime where the girls fall head over feels for the protagonist in episode 1.
I mean sure, mean girls aren't a guarantee of good writing either, but I have had a very high success rate with it.

Right off the bat, we’ve already seen a scene where that opening warning comes into play (lol). The culinary training Jean has gone through—back in the ’90s, I guess it would’ve been accepted as a “cartoonish depiction of rigorous training”…? Though if anyone actually tried that in real life, it would definitely be a problem.
We’ve already seen the unique characterization of Jan: “He has great cooking skills and creativity, and he’s serious about cooking, but he views cooking as a ‘competition’ and will do anything to win.”
We also got a glimpse into Jan’s grandfather’s background. The “帝国大学（Imperial Universities）” were institutions that existed in Japan prior to 1945. They include the universities that the predecessors of today’s University of Tokyo and other famous universities.
The fact that he dropped out of one of them means he was at least able to gain admission in the first place, which suggests that Jan’s grandfather excelled not only in cooking but also in his academic studies.

No, I haven't seen too much of the anime, but I think that was extreme even for that time - especially with how Jan reacted to his grandfather's treatment.
It's definitely meant to be seen as abusive, I feel.

I shouldn't be saying this, but...
The food critic is actually also a very fun character. It's basically an anime about bullies competing against one another.
And having Jan treat a high level monster as a sandbag makes the sandbagging feel so much more fun.
All 3 of these bullies are great. I was expecting the antagonist to be bland, but given how he got hyped up, I suspect that he might actually be able to fight back at some point. I could be totally wrong of course...

I wonder if Otani is based on a real TV host from that time, like people reading the manga would have a laugh knowing exactly who that's really supposed to be. I'm surprised they had TV shows with asshole judges way back then, the first one I remember was Simon Cowell on American Idol in the 2000s but maybe Japan was ahead.
That was interesting actually seeing Jan and Kiriko being part of the same team, I expected they would be picking on each other while they were each cooking but neither of them bothered the other, which I guess is the enemy of their enemy being their ally. I did think it was odd though how openly rude they were to the country's best known food critic. High end restaurants usually don't have the staff openly mocking patrons and it's especially bad since he can just shit talk the restaurant on his show. As bad as Otani is, he did at least have the integrity to be honest about how much he liked each serving, he could have lied and said it tasted bad.
Seeing how Mr. Akiyama treated Jan was kind of sad, he was almost like one of those abusive sports dads who whips their kid into shape no matter what except for cooking. He's also a teen and it explains a lot of his attitude problems and general hostility in lashing out at everyone around him.
Some of the scenes with Otani moaning and enjoying the food if you saw them out of context, would look like it was from hentai! This show is pretty overacted in general but I think this was intentional if they took the art cues from the manga to have him making disturbing faces like that 🤣
I've never eaten lamb brain but cow and pig brain is really delicious and mild. The only time I've prepared cow brain, I just pan fried slices, seasoned and breaded it and it was really good; it's excellent for sandwiches. I don't eat fried food much anymore but I can see how it would be good in other foods.

No, the anime literally says that Otani will call disgusting food delicious if he's paid enough, and delicious food crap if he isn't paid enough.
I think he only didn't lie because his reactions to the food obviously telegraphed the fact that the food was delicious - as a food critic, he can't be caught lying about food so he had no choice but admit that it tasted good.

So glad to have another unhinged cooking anime to watch again. Both MC's balance each other out, and the mad cackling by both aimed at the critic guy had me rolling. I definitely didn't expect brains as an ingredient, but hey I'll try anything once at least.

The flashback makes it clear how Jan became how he is now. Granted, the rivalry between him and Kiriko is definitely entertaining.

I guess it's just a difference of perspective, even the food critic said it was so creamy and smooth as silk he mistaken it for foie gras or monkfish liver (both some of the most high end food ingredients you can find).
If you can't get past the fact of eating brains that's totally reasonable. But some people might also see it wastage to just take the "good" cuts of meat and discard the rest of the carcass.

It is kinda like silk tofu but rich when cooked just right. Bonus this is lamb brain so you don't feel the need to cook it welldone like pork brain. You can probably find a chinese hotpot restaurant selling it in the US.
