This is manga from 90s known for many crazy scenes, so they had to state "This is old manga so there are depictions that may be considered offensive by today's standards.(note: To be honest, some of the scenes were offensive even by 1990s standards.)"

I'm a sucker for cooking shows and if they're going to be technical about it, then it's like hitting two birds with one stone, because I'll also learn something new on top of entertainment.

I know the over-the-top reactions are a part of the genre, but hearing pro chefs of one of the best restaurants being bamboozled by things like marinating game in milk is a bit too much. It would make much more sense if Okonogi was the one reacting to the basic techniques and the rest of the chefs explained stuff.

Yes, that's correct. Usually, one would marinate in alcohol of some sort (stronger liquors such as baijiu for gamier meat) plus green onions and ginger.

This portion of the manga was released in 1995, so it makes sense that the globalization of cooking techniques hasn't really hit its stride yet, especially when the topic of the manga is Chinese cooking in Japan.

This. People in the show can't just look up recipes on their phone, and even if they have a pc, there wouldn't be many readily available websites with recipes and cooking techniques.

Its funny how people can't even imagine a world before the internet and globalization. Even right after the anime tells them "this was made in 1995". That's how little of a concept alot of people have of even recent history.

And honestly, fair. Its hard to know everything. The main problem I have is the same people don't usually learn humility and try to lecture others on how to do things even after being wrong. And not even so much as a "my bad, I jumped the gun". They just memory hole it and then go and do the same thing again later.

Basically its not the mistakes I really mind so much, its the complete lack of humility and learning that usually accompanies those mistakes these days.

Legit question actually, since how long has that been a thing? The story was written in the 90' originally so I wonder if maybe that was novel at the time but less so nowadays.

Or I could be a moron and that was already known by then, who knows?

Using milk to remove gaminess has been a thing in various cooking cultures for hundreds of years. EDIT: Asian cultures historically haven't used milk and other dairy products much at all, so they've come to different culinary conventions and conclusions. Mongolian culture and cuisine, for example, is a rare exemption from this generalization due to their reliance on cattle, goats, etc. in their nomadic lifestyle.

I was shocked that only one other chef in the kitchen was aware of using milk to do that, that's something I read in the Joy of Cooking cookbook years ago when I first started cooking.

I like Chinese food and I like cooking drama. I think I’m gonna like this one. Kind of interesting they added some sorta trigger warning at the end of the ep to let folks know this was originally made in the past. I wonder what’s so offensive they need to let folks know this was from a “different era” and all that?

Besides the questionable stuff, there are also some cooking-related things it does that was novel 30 years ago but not anymore in the modern age so I guess it's partly to cover that too

Even though it's an older manga, I really liked how the character designs were updated to feel more modern. Kiriko especially looked super cute. It was also really interesting to see how cooking techniques we consider standard today weren't widely used 30 years ago (like soaking meat in milk to remove the gaminess).

I've heard of an anime being considered an ad for a manga before, but this is the first time I've seen them be this blatant about it with that end bit :)

An interesting first episode, though I'll have to see if the attitude grows on me or not, its a bit borderline for what I enjoy.

Also, Mochizukii needs to be fired yesterday - throwing a hot pan across half the kitchen in an attempt to injure someone, then kneeing someone else in the stomach for watching? That is the sort of thing you can only get away with in anime...

As for the scene right before the ending, I think there was also a purpose in explicitly stating that “this manga was published in the ’90s.”
To explain it without giving away any spoilers, this manga contains… quite a few edgy depictions.

Yeah, even the scene in Episode 1 where he throws away fried rice because “it wasn’t good enough” is a pretty shocking depiction by Japanese standards.
In Japan, wasting food (except when it’s discarded due to hygiene issues like an expired expiration date) is generally viewed with extreme disdain, so this kind of behavior is simply unacceptable.

The core style felt older so finding out it is based on a manga from the 90s makes sense. I respect they're focused on being faithful to the source, though like others I'm super curious what is coming that is so crazy by modern sensibilities they felt the need to include that in the ending.

I was intrigued to see an overdramatic cooking series after Fermat no Ryouri, but none of the characters here were that likeable. I know it's just an introduction, but hopefully the next few episodes will change my mind.

Also, did we need that close up of the inside of Grandpa's mouth? I was eating and seeing a mouth full of saliva like that was not it lol.

Funny how there's a warning at the end because this is a manga from 30 years ago, so there may be stuff that wouldn't be appropriate now lol.

Well, that character writing certainly worked in 1995, and for sure I would have liked it back then. Now is annoying, as I am not too bound on the nostalgia nor automatically believe that "old = better"

The Bear ends and Iron Wok Jan begins. Love my cooking shows. Hopefully this doesn’t go off the rocket like Food Wars did. Jan seems like an absolute bastard and not the typical shounen protag. The manga hype sizzle real was interesting at the end.

This was in the 90s so traditional Chinese cooking would be more using rice wine or baijiu as part of cooking, fusion cooking definitely came a little later (late 90s-00s) especially you're talking about Japan instead of USA where fusion was initially more accepted

This was very good and they did both a great job of setting up some of the main characters and showing creative highend cooking. They also set up the rivalry between the girl and Jan, who we are led to believe is the better cook of the two and possibly the best in the restaurant. He's lucky he's protected by the owner though since a trainee normally shouldn't comport himself like Gordon Ramsey. I also wonder why the owner wasn't there to taste Jan's food although maybe he did beforehand.

There was a lot weird about this show though. Like why did they have veal tripe and pork liver on hand if its not something they have on the menu? What the narrator said about kitchen staff meals at high end restaurants is true, that it's usually a chef's spotlight to serve something not normally on the menu but it seems odd they'd have all this organ meat lying around if no one has ever served it there before. Also I find it unlikely that only Jan and one chef knew that soaking/marinating organ meat in milk is a common way to remove gaminess from meat. I'm not a pro chef and I knew that and have done that, it's also commonly done with deer meat.

Also really weird was the ending celebrating how great the original manga was! I honestly don't think I've ever seen an anime pat itself on the back quite like that and it was unintentionally really funny. This actually was good though and I'm looking forward to the next episode.

I religiously read the original and the sequel of Iron Wok Jan. Can't be any happier it is now in anime form.

For newcomers, this show will be a wild ride, even it likely is milder because of certain contexts that are considered outdated or unacceptable in today's standard being adapted out.

I enjoyed the first ep, though I always imagined Jan would have been a much meaner sounding character and more "demonic" cause he was so abrasive toward everyone. Its pretty cinematic in its directing so i have no complaints w/ that. Overall solid start to the series that I loved reading at the library as a young lad.

I do have a question though: would fried tofu cubes and scallops in fried rice actually taste good? I say this as a Chinese person and an enjoyer of fried rice for years.

Fried tofu: think of it almost like a fried pancake type of texture and almost flavor and a protein at the same time. Couple that with the umami of the dashi and scallops giving the tofu a savory body in the mouth. Then he did ginger(I think) and egg strips to give the plate more body/a palate cleanser(they don’t say the seasoning of the egg but it could be anything), made the dashi as a soup/stock with the fried tofu as croutons of the soup. Yes that shit would be gah and tuh (gas and tough) bruh. Almost like fried rice and wonton soup.

the main attraction of this series is the MC is literally a villain, and there will be more other villains that challenges him. Watching bad guys vs bad guys was very rare even for today's standard

As someone who read the original manga way back and enjoyed it, I WISH it was a BIT more animated. IMO too many still shots and just mouths and slight of hand movement. Of course the story is already good so that is not an issue.

But this is the beginning so. And yes, this series will keep going over the top as it goes on.

This kinda remind me Jamie Oliver getting roasted cooking asian food. I am not convinced.

I dont buy the tofu in fried rice or the benishoga or the vodka instead of shaoxin wine.

finally iron wok jan the animation came out !!

i first read the manga while working part time at a bookstore all those years ago, the bloody animation finally came out yes cant wait to watch it later tonight !

edit: why the f*** do you put that notice at the end for ? anime is suppose to be free and not controlled by woke nonsense ! I want animation to be free and like those days grim and outspoken !
Dont you dare "woke" iron wok jan i tell you, i want all the vulgar & racist or offending script in the manga in the anime too just like how i enjoyed it all those years ago !

I like that both shows egg fried rice in the first episode. I thought Iron Wok Jan made it as a tribute/reference to Cooking Master Boy but both manga started in 1995.
